Sublime Coconut Bliss Balls


Lime and Coconut Protein Balls

Once again I have experimenting with balls! I love using essential oils and wanted to see if I could make a low carb, tasty, organic protein ball. I am glad to say I succeeded and am very pleased with the result. However, to test them out, I took them to a presentation I was having at the gym and handed them out to willing participants. Everyone who tried them seemed impressed, so I'll take that as a win and share my recipe with anyone who is interested in gluten-free, dairy free, low carb, paleo style snacks.

 

INGREDIENTS:

1 Cup (70g) Desiccated Coconut (use some to roll balls in)

Warm water To Mix (Opional)

DIRECTIONS

Place all the ingredients (except lime essential oil) into a large bowl and mix with a fork until well combined. You could use a food processor instead of mixing by hand if you prefer.

Once combined add the Lime essential oil and stir again. If the mixture is too dry, add a little warm water from the kettle (not boiling) until the mixture becomes softer and easy to roll into balls. You should get around 25 bite size pieces. Roll each ball in coconut and place in the fridge to set.

NOTES

When using coconut cream, scoop the cream out and drain the water off. A can usually has around 250ml of coconut cream. You could double the mix and make 50 balls to share with friends or freeze. I prefer to use Plant Fusion Vanilla Protein Powder for making protein balls because of the texture. However, if you would like a sweeter taste, use coconut flavour, Prana On Plant Protein Powder instead.
